EATING CLEAN DOESN’T HAVE TO BE BORING NOR REPETITIVE.. YOU JUST NEED TO GET CREATIVE IN THE KITCHEN! YOU DON’T NEED TO BE AN EXPERT AT COOKING TO DO SO, HONESTLY.. MY METHOD IS JUST BASICALLY THROWING TOGETHER INGREDIENTS I LIKE AND HOPING FOR THE BEST, I WISH I WAS KIDDING HAHA.
I EAT A HIGH PROTEIN DIET AND TEND TO KEEP MAJORITY OF THE FOODS I EAT SIMPLE WITH MINIMAL INGREDIENTS, IT’S JUST WHAT MAKES ME PERSONALLY FEEL BEST! SO I LOVE CREATING RECIPES AND MEALS THAT ARE SIMPLE, TASTY AND SOMETHING YOU CAN EAT EVERYDAY AMONGST A HEALTHY DIET AND AREN’T GOING TO FEEL DEPRIVED AT ALL!

HONESTLY I COMPLETELY WINGED THIS RECIPE ( AS PER USUAL ) AND NOT TO TOOT MY OWN HORN, BUT I NAILED IT. I AM GOING TO MAKE THIS A STAPLE IN MY DIET! SO HEALTHY, YUM AND IS A GOOD CHANGE FROM MY NORMAL CHICKEN DISHES!

YOU WILL NEED
1 LARGE CHICKEN BREAST ( I JUST PULSED MINE IN A BLENDER, BUT IF YOU CAN TRY TO GET MINCED CHICKEN )
1/2 CUP SHREDDED CAPSICUM (ANY VEGGIE YOU HAVE ON HAND WOULD WORK (EG. CARROT, ZUCCHINI)
SMOKED PAPRIKA
1 LARGE EGG
1 TBSP GHEE
1.5 TBSP OLIVE OIL
SALT & PEPPER
*OPTIONAL
GARLIC & ONION ( I WOULDN’T RECOMMEND IF YOU HAVE IBS OR A SENSITIVE GUT )
TZATZIKI SAUCE
1 CUP FULL FAT GREEK YOGHURT
2 TBSP OLIVE OIL
1 TBSP FINELY CHOPPED DILL
SQUEEZE OF LEMON
INSTRUCTIONS
I PULSED MY CHICKEN AND CAPSICUM SEPARATELY TO MAKE THEM ‘MINCED’ BUT YOU CAN ALSO BUY PRE-MINCED CHICKEN AND JUST GRATE YOUR CAPSICUM WITH A GRATER.
COMBINE ALL OF THE INGREDIENTS EXCEPT THE OLIVE OIL TOGETHER IN A LARGE MIXING BOWL.
OVER MEDIUM HEAT, HEAT UP A FRY PAN THEN ADD THE OLIVE OIL.
WITH A LARGE SPOON, INDIVIDUALLY PICK UP SPOONFULS OF THE CHICKEN MIXTURE AND ADD IT TO THE HEATED OLIVE OIL. THIS WAY THE FRITTERS SHOULD ALL TURN OUT A SIMILAR SIZE.
ROUGHLY COOK 3-5 MINUTES ON EACH SIDE UNTIL CRISPY.
TO MAKE THE TZATZIKI SIMPLY MIX THE INGREDIENTS TOGETHER AND SERVE.
