CHOC CHIP FIT PANCAKES

VEGAN PANCAKES

  • 250G ripped mashed banana

  • 70g protein powder, I use womensbest whey protein in vanilla

    ‘CEE10’ for 10% off

  • 50g chocolate chips, I used these

  • 1 tsp baking powder

  • 1 tsp baking soda

  • Vanilla drops, I use this

  • 2 tbsp almond butter

  • 1/4 cup almond milk (more if needed)

  • pinch of pink salt

*note, I like mine sweet so I will add honey ontop at the end.


INSTRUCTIONS

  1. In a large mixing bowl, mash the bananas and add the vanilla drops, almond butter & almond milk.

  2. Add in the dry ingredients including 1/2 of the chocolate chips, combine well.

  3. Heat a skillet over low heat, add in cooking oil (I use a spray olive oil)

  4. Pouring the mixture on the skillet, adding the left over choc chips on top of each single pancakes once cooking, you should make approx 12 decent size pancakes. Cooking each side until bubbles appear.

  5. Once cool, my fave toppings to add are ; greek yoghurt, honey, berries, choc chips or almond butter

The riper the banana, the sweeter the pancakes!

I love having ripe bananas in the house, I will use them for baking banana breads, muffins, pancakes or simply chopping them up and storing them in eco friendly zip lock bags to put in the freezer to use in smoothies!
