VEGAN - HIGH PROTEIN BREAKFAST COOKIES?

..AKA cookies for breakfast.. I’m in!


I HAVE BEEN CRAVING SWEET THINGS IN THE MORNINGS AS OF LATE AND HAVE BEEN RUNNING ON A BUSY ‘ON THE GO’ KINDA SCHEDULE, SO I HAVE CREATED THESE BREAKFAST COOKIES FOR A GOOD ‘IN A RUSH’ BREAKFAST OR EVEN JUST AS A HEALTHY SNACK. SINCE HEALING MY GUT WITH THE HELP OF MY GUT RESET PROGRAM AND FOLLOWING THE EATING PLAN I HAVE SLOWLY BEEN ABLE TO REINTRODUCE INGREDIENT THAT MY TUMMY DIDN’T AGREE WITH BEFORE! AND GRAINS LIKE RICE AND OATS WHERE ONE OF THEM..

IF YOU HAVE OR HAD ANY GUT ISSUES YOU KNOW HOW PAINFUL IT CAN BE TO HAVE TO CUT OUT THE THINGS YOU LOVE. THANKFULLY I HAVE BEEN ABLE TO RESTORE MY GUT MICROBIOME THROUGH FOLLOWING MY EATING PLAN AND CAN FINALLY TOLERATE OATS AGAIN! (ONLY FOODIES WILL UNDERSTAND HOW HAPPY I AM LOL)

MAKES 30 COOKIES | prep time 20 min | cook time 0 | total 20 min


 
 

YOU WILL NEED

  • 1 CUP CASHEW BUTTER (ANY NUT BUTTER WILL DO)

  • 1.5 CUPS MASHED RIPE BANANA

  • 2 CUPS GLUTEN FREE OATS

  • 1 TSP CINNAMON

  • 1 TSP VANILLA EXTRACT

  • 2 SCOOPS OF VANILLA PROTEIN. *I USE WOMENS BEST PLAN PROTEIN (use my code ‘CHRISTIE10’ for 10% off)

  • CHOCOLATE CHIPS FOR TOPPING *OPTIONAL

INSTRUCTIONS

  1. LINE A TRAY WITH BAKING PAPER, SET ASIDE.

  2. IN A MIXING BOWL, ADD THE MASHED BANANA, CASHEW BUTTER AND VANILLA. COMBINE WELL.

  3. ADD IN THE DRY INGREDIENTS, PROTEIN POWDER, OATS AND CINNAMON.

  4. COMBINE THE INGREDIENTS TOGETHER UNTIL A STICKY MIXTURE FORMS, IT SHOLD BE GOOEY AND HOLDS TOGETHER ONCE YOUR CREATE A SMALL HANDFUL SIZED COOKIE SHAPE. IF YOU FEEL IT IS TOO DRY, ADD A DASH OF WATER.. OR IF IT IS TOO WET ADD MORE OATS.

  5. LAY OUT PREPARED COOKIES ON THE BAKING PAPER, TOPPING WITH THE CHOCOLATE CHIPS (OR EVEN COCONUT IS NICE!) AND LEAVING TO SET IN THE FRIDGE.

    - NOTE * YOU CAN EAT THEM STRAIGHT AWAY BUT WARNING.. YOU MAY EAT THEM ALL IN ONCE SITTING.. HENCE WHY I ONLY HAD 4 LEFT TO PHOTOGRAPH HAHA.. #OOPS
