PROTEIN PALEO COOKIES
Y'all know your girl has a major sweet tooth..
and because of that, I try to re make me favourite child hood treats with a more 'cleaner' & paleo approach.. mainly so I can have them whenever I want and don't have to worry about feeling sluggish or having a sugar crash later.
So if you're looking for a light snack/dessert thats high in protein and satisfies you're sugar cravings, these cookies are the way to go! + they are so easy to make with little ingredients (better for the gut) and literally stuff you would already have in your pantry!
Lately I have been making a batch of these and putting them in containers in the fridge and serving them with coconut yoghurt and berries! Tiff (my house mate) has already eaten 1 batch in a few hours.. thats how light and flavour packed they are haha. Some times instead of the choc chips I actually bake it with some loving earth salted caramel chocolate instead and wowza! but thats only when i'm feeling super fancy and want to spend an arm and a leg on a chocolate block lol.

serves 2-3 | prep time 10 mins | cook time 10 mins | total time 20 mins
YOU WILL NEED -
1 large ripe banana *mashed
1 egg
2 egg whites
1/4 cup chia seeds
60g vanilla protein powder
1/2 cup almond flour
3 tbsp almond butter
1tsp vanilla
pinch of salt
1 tsp baking soda
1/4 cup dairy free chocolate chips
Instructions;
Preheat oven to 190c degrees and line a baking tray with baking paper.
In a medium bowl add the eggs, almond butter, and vanilla. Whisk until completely incorporated.
Add almond flour, pre mashed banana, chia, protein, salt and baking soda. Mix until combined.
Fold in chocolate chips.
Using your hands, portion dough into roughly 8 even balls and slightly flatten with your fingers.
Bake for 10-15 minutes.
