..Show up to the Christmas table with these paleo treats and
I promise you, the family won’t even pay attention to your shitty attempt at wrapping their presents (by presents I mean a random book you’d thought would be good for mum, socks bought from Kmart for Dad and something cheap but kinda useful for the siblings)

MAKES 16 slices | prep time 20 min | chill time 30 min | total 1 hour


 
 

YOU WILL NEED

  • 2 cups desiccated coconut

  • 3 tbsp maple syrup

  • 3 tbsp coconut oil, melted

  • 1 cup freeze dries cherries

  • 3/4 cup freeze dries raspberries

  • pinch of pink salt

  • 300g dark chocolate

  • 1/2 cup coconut for decoration (desiccated or flaked will do)

  • a handful of goji berries for decoration *optional

*note, I wish I used a bigger brownie tin so my layers would of been thinner. But hence why I make the mistakes so you don’t lol!

  1. Line a brownie tin (20cm x 20cm is the smallest i’d go with this mixture) with baking paper.

  2. Melt the store bought dark chocolate either by placing a heat proof bowl set over a pan of boiling water. Ensure the bowl doesn’t touch the water to avoid over heating the chocolate. or simply use a microwave #lazybutyolo

  3. Then add the melted chocolate to the prepared tin. Transfer to the freezer to set for 10 minutes.

  4. In a blender, blend the rest of the ingredients apart from the extra coconut and goji berries.

  5. After the chocolate layer is set, add the blended layer ontop, using a spoon to evenly spread the mixture across.

  6. Add the coconut and goji berries ontop and leave in the fridge for another 30minutes.

  7. Once fully set, Use a hot dry knife (e.g. dip the knife into steaming hot water then dry) to cut the mixture into approx 16 slices. Store in the fridge for up to 2 week, or in the freezer.
